Sometimes simple weekends can be the best weekends and this was one of those weekends. Grandma offered to take Paddy for a sleepover Saturday night, so the Mister and I decided to spend a simple night in.

We started off the afternoon watching Spectre. We are both huge Bond nerds, and we had not watched this newest incarnation yet. I have heard mixed reviews, but I will watch anything Bond with zero complaints.

After the movie, I cooked us a delicious Chicken Curry with some chicken I had roasted earlier and fresh veggies. Then we played some over-the-shoulder, couples co-op in Kholat. What a creepy game that was. The Mister told me he needed me there to hold his hand when it got scary…and it did.

One of the best parts of Grandma watching Paddy overnight is that we got to sleep in on Sunday morning! Happy Father’s day! When she did bring him home she also brought me some fresh peonies from her neighbor’s garden…in the most beautiful shade of magenta. peonies When dinner rolled around on Sunday night, it was time to make Pho! This soup has been a favorite of mine since my days as an intern at KCAVP. We used to order it for lunch from the local Vietnamese restaurant. Since we do not have any such restaurants in this neck of the woods, I decided to try my hand at it. I am always worried when I try to make a food that I love for the first time… Will it be as good? Will it have the same flavor?

The verdict for the Pho…Yes! It was better than good and the flavor was everything I remember. I am sure it helps that the broth was homemade bone broth from the aforementioned roasted chicken, not to mention the loads of fresh cilantro and peppers. yummy pho There are so many things that I love about Pho. To start, the presentation. It is pretty much deconstructed chicken soup with an Asian flavor palate. It looks so pretty when put on a plate. Next is the way the aromatics work in the soup. I love how fragrant the jalapenos and cilantro become. These flavors blend with the spicy sriracha and sweet hoisin to make the most amazing combo! I also love rice noodles, I don’t have any fantastic culinary explanation for why…I just do!

The soup was a huge success. While the prep for the chicken and the broth was a day in the making it was utterly worth it. I could not be happier with the result! Even the Mister was a big fan! Lucky for me, since this was his Father’s Day dinner!

All in all our Father’s Day weekend was simple and delicious, and I could ask for nothing more! goofing around
