Coleslaw. Of course!

What can be said about coleslaw, really? It’s a good side dish, except sometimes it isn’t. I liked it a lot as a kid, but for a while I didn’t.

Looking for recipes comparable to the one that I use just made my face scrunch up. None of them sounded good at all. There seem to be only two options with no middle ground: bland and boring, or overly complicated and off-putting. So I guess that is what I can say…the recipe I have, really is the best coleslaw I have ever eaten.

I got the recipe from my mom who won’t even eat coleslaw, yet somehow managed to create a brilliant batch of it . It’s simple, but flavorful. Classic without need for crazy ingredients. And because of this, it’s is easy to add a bit of flair to if that’s your cup of tea.

The base recipe really is amazing. But, I tried my hand at a Curried Mango Pepper version that came out pretty fantastic as well.

To really up the ante with the basic recipe though, I made it using three varieties of fresh, local, CSA cabbage. It’s a real shame that no one else in my family will eat it. They don’t know what they are missing.
